An ermine is a member of the weasel family, I believe it's one of the smallest members too (the least weasel being the smallest)
They're often used for fur coats. In the summer their coat is a gorgeous red on top, yellowish on the bottom. If you like weasels, you'll love these little guys.
One of the things they like to eat are squirrels, gray squirrels in particular IIRC. They also I assume eat rats and mice.
I'm sure farmers like these guys as they keep the rodents from eating their c
